I have searched for a good Paleo substitute for chocolate chip cookies since I went Paleo over 2 years ago! This one has finally resulted in the end of my search! I got this recipe from my friend, Stacey (who is an awesome Paleo baker!). It calls for a mixture of coconut flour, blanched almond flour and almond meal. Using the almond meal is basically a way to cut down cost, since the meal is about half the price, but you could use all blanched almond meal instead if you wish!
Paleo Chocolate Chip Cookie
- Preheat oven to 375 degrees F
- Mix all dry ingredients in small bowl
- Mix all wet ingredients in medium bowl. Fold dry ingredients into the wet. Add chocolate chips.
- Scoop tablespoon size balls on baking sheet. (I line my sheet with parchment paper)
- Bake for 8-10 minutes.
Note: These cookies do not spread like normal chocolate chip cookies do. They maintain their ball shape.
