I love fall! I know I’m not the only one…every blog I have been reading lately seems to talk about this love of fall. If I let myself think about the fact that fall is a pre-cursor to winter, I start to get depressed. So that’s why i prefer to live in the here and now, and in present time…fall is awesome! You get to change your wardrobe, decorations, and even your cooking.
I love fall recipes! Pumpkin, apples, cinnamon- these are all favorite cooking ingredients for me. This recipe mixes apples with bacon!!! Shut the front door! I have yet to find a recipe that includes bacon that I didn’t like really…
Apple Bacon Pork Chops
- 4-6 pork chops
- garlic powder
- sea salt
- maple syrup
- extra virgin olive oil
- 1 lb bacon, cubed
- 2 shallots, thinly sliced
- 2 apples, peeled,cored and thinly sliced
- Sprinkle pork chops with thyme, garlic powder, cinnamon, and sea salt and pepper (I didn’t measure just sprinkle on top of all the chops)
- Drizzle maple syrup and olive oil over the chops (again, I didn’t measure). Then rub on the chops.
- Let chops marinade for at least an hour
- Heat grill to medium. Once heated, place chops on grill
- While chops are on the grill, cook up your sliced bacon until it is almost crispy.
- Add shallots and cook until soft and translucent. Then add your apple slices and cook until soft.
- Serve pork chops with apple/ bacon mixture on top. Yum!
I know…I’m sure you have felt abandoned! To be honest, I have been obsessed with the Crossfit Open over the past month. It was such a great event to be a part of. I love how it pushes you outside of your comfort zone and forces you to do things that you wouldn’t normally do. Then again, I also hate how it makes you feel much more sucky (yes, that’s a word!) at things that you thought you were okay at. Let’s just put it this way, my list of “things to work on” grew exponentially over the course of this season’s Open. With all that said, I would like to give a shout out and congrats to my box for placing 13th in our region and qualifying for Regionals for a third year! Nice Job Crossfit AMRAP! How did you do? I would love to hear from you about your Open experiences!
Now on to an amazing recipe that will hopefully help you to forgive me…Chocolate Waffles!!! Yes, they are as wonderful as they sound! I got this one from Juli Bauer’s (PaleOMG) new cookbook, OMG. That’s Paleo? I am in love with this cookbook! Seriously- go order it today!!!! Luckily, this particular recipe from the book is posted on her website, so I can share it with you.
Chocolate Waffles by PaleOMG
No need to change anything on this one, they are perfect just the way they are! I would suggest doubling or even tripling the recipe for a family. One batch only makes about 2-3 (Belgian size) waffles. We topped ours with maple syrup, ghee and strawberries. Enjoy…we certainly did!
Note: I used my 1/3 cup measuring cup to scoop the batter into my waffle iron. It took 2 scoops per waffle.
If your kids are anything like mine, they will fall in love with snack foods that are way too pricey for everyday consumption. Justin’s squeezable maple almond butter packs are one of these said snacks. That is why I am so pumped to find a homemade version of this tasty snack! I throw everything in the food processor , blend and scoop out portions into snack size baggies! Genius! My only issue is that I haven’t figured out how to make these more portable. To serve, I cut one corner of the baggie and my kids squeeze the almond butter into their mouths. Since I don’t carry a pair of scissors on me everywhere I go, it limits the portability of this snack…ok maybe I’ll just go buy a small pair of scissors to carry in my purse!
